Pros & Cons:
They both have the benefit of having never been tried by us. According to the SHT Guidebook, they both have difficult sections. However the first 1.5 miles of option 2 are very difficult. Gabe and I have hiked that section without packs and thought it was pretty brutal. Parking at the end of option 2 might be tricky.

If we can swing it, we'll be doing an extended chunk of the SHT.Here's another thought: Since it seems there'll just be two of us, and a long hike just means we have to carry a ludicrous amount of gear and food, how about we revisit Manitou? We can spend a quite a few days in there and swing by the car once or twice to refuel. We already know there are atleast 3 days of good hiking in there, and we could easily make it 4 with an extended stay at site 13. Usually it might be hard to get sites, but I figure that if we can go on Tuesday, we have a better shot at getting ones we want. Perhaps 19 or one of the others around that lake the first night.
Proposed Route
If we do Manitou:
Day one: Site 19 first night. Only a short hike from the parking.
Day two: Matt Willis Trail all the way down to 13. Not super rough, but a 300' decline at the end.
Day three: Cedar Ridge Trail to Yellow Birch Trail to car. Refuel. On to site 2, 3 or 4.
Day four: Along the river back down to 13. This is a brutal one, if memory serves.
Day five: Back to car anyway we want. Perhaps Matt Willis to Beaver Bog.

Itasca State Park ~20 miles north of Park Rapids.

Proposed Route
Day 1: Leave around 8 am. Should take about 2-2.5 hours to reach the park.If two cars, park a car at the southern tip of the east arm of Lake Itasca, then drive to the southern tip of the west arm. If one car, plant a bike at the former (it's only 3 miles from one parking lot to the other). Or, hell, someone could walk/run to the car if they felt like it.
Start in the center of the park, at the southern tip of the west arm of Lake Itasca. Day hike near the Lake Itasca (optionally) and then hike south about 2 miles to site B02 and camp.
Day 2: Take our time getting to site B07, approximately 5 miles away. Plenty of day hiking possibilities. Camp.
Day 3: Day hike near southern tip of east arm of Lake Itasca and then head out
